Quick Baking Tips & Fun Fact
Fun Fact
Did you know canned pumpkin puree isn't actually pure pumpkin? Most commercial canned pumpkin is made from Dickinson squash—a tan, deeply flavorful relative of the butternut squash! Pure pumpkin can often be stringy and watery, whereas Dickinson squash gives baked goods that velvety smooth texture and deep amber color we all love.
Key Baking Tips
Versatile Cake Base: While this doubled recipe works like a dream for hot-mash cakesicles, it is also my go-to standard cake batter! You can bake this single-batch batter into moist cake layers or a batch of cupcakes.
The Perfect Pairing: If you are baking this as a traditional cake or cupcakes instead of cakesicles, pair it with a rich cinnamon cream cheese frosting—the cozy spices elevate the pumpkin flavor to the next level.
The Hot-Mash Magic: Mixing the cake immediately out of the oven while piping hot breaks down its structure and traps the natural steam. This forms a cohesive, pliable dough without adding extra buttercream, keeping the cakesicles dense, rich, and easy to mold.
Watch the Toothpick: Check your pan around the 25-minute mark. You want a toothpick to come out with a few moist, soft crumbs. If it comes out completely clean, the cake is overbaked and will lose the moisture needed to form a smooth dough.

Step-by-Step Instructions
1. Bake the Pumpkin Cake
Preheat & Prep: Preheat your oven to 350°F. Lightly grease a 9x13 aluminum pan.
Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
Combine Wet Ingredients & Mix: Add the pumpkin puree, vegetable oil, milk, eggs, and vanilla extract directly to the dry ingredients. Mix until smooth and fully incorporated.
Bake: Pour the batter into your aluminum pan. Bake for 25 to 35 minutes.
Pro Tip: Test with a toothpick—you want it to come out with a few moist crumbs. If it comes out 100% clean, the cake is overbaked!
2. Mix into Hot Cake Dough
Hot Mash Technique: The second the cake comes out of the oven, transfer the piping-hot cake directly into your stand mixer bowl fitted with the paddle attachment (or mash thoroughly by hand).
Mix to Dough: Mix on low-medium speed for 2 to 3 minutes until it breaks down completely and forms a cohesive, pliable dough-like texture. No extra frosting required!
Rest: Cover the surface of the dough directly with plastic wrap (touching the dough so a skin doesn't form) and let it cool until it reaches room temperature and is safe to handle.
3. Portion & Mold
Scale Portions: Weigh out dough portions to 45–50 grams per cakesicle cavity.
Fill Molds: Press the dough firmly into your cakesicle molds to fill the space and level off the back cleanly.
Insert Sticks: Slide a [popsicle stick] through the mold slot into the dough. Push it about 75% of the way through the shape—do not let it poke through the top!
Lock & Unmold: Press down firmly around the stick to lock the dough around it, then carefully unmold your shaped cake pops.
4. Dip & Decorate
Melt & Color: Melt your [white chocolate melts] and dye the chocolate using [Colour Mill oil-based coloring] (oil-based color is crucial so the chocolate doesn't seize!).
Dip & Detail: Dip each cakesicle into your orange chocolate. Once set, use [disposable piping bags] to detail your Jack-O'-Lantern faces, stems, and vines.
Package: Once fully set, slide them into [clear packaging bags] and seal for gifting or selling!
Key Baker Tips
Why Skip the Frosting? Mixing this pumpkin cake immediately out of the oven while hot breaks down the structure and releases the cake's natural steam and moisture, forming a perfect moldable dough without needing sweet buttercream!
Don't Overbake: Keep an eye on your toothpick test around the 25-minute mark. Overbaking removes the essential moisture needed to form the dough cleanly.
Aluminum vs. Glass Pans: Standard aluminum pans distribute heat quickly and evenly without scorching the bottom crust, keeping your cake soft from edge to edge.
