Make & Chill the Pastry Cream Base

Whisk Yolks & Cornstarch: In a heat-safe bowl, whisk together the 4 egg yolks, cornstarch (32g), and the remaining granulated sugar (50g) until pale and smooth.
Temper & Cook: Slowly pour a splash of the hot milk mixture into the egg mixture while whisking constantly to temper the eggs. Pour the tempered egg mixture back into the pot and cook over medium heat, whisking continuously until thick and bubbling.
Finish Custard & Chill: Remove from heat and stir in the butter (28g) and vanilla extract (4g) until fully incorporated. Transfer the custard to a shallow dish, press plastic wrap directly onto the surface to prevent a skin from forming, and chill in the fridge until completely cold.
